To 5 years of being a Veg Head...

Happy Birthday to the Vegetarian inside of me! I know most of you's will be thinking what the hell has this got to do with fashion or beauty... well... Apart from the obvious choice of how I felt with the way animals are being treated, it was also a massive diet choice for me. Many moons ago I was some where between 16st and 17st and now I am 10st! So eating more healthily in my foods definitely helped me loose weight over time. I didn't starve myself, I have always ate but in sensible portions instead of the mammoth sizes I used to eat.

Don't get me wrong I love anyone of any size... I just didn't love me and I am much more happier this way compared to how I was :)!

I make all of my meals, simply because I don't trust my mother :P and I wanted to share one of my favorite recipes which is a veggie curry! It can be tweaked if you like meat, but it's so yummy, light and  healthy! :)! NOM!

I usually eat this by myself so I can't help on portions... I guess the big gal inside me takes over still ;)

What You Need...
1 Large Sauce Pan
1 Onion ( I like Tesco's Sweet Onions)
1 Broccoli Floret
1 Cauliflower Floret
A few Mushrooms
A curry powder of your choice, I usually use medium curry and tikka masala!
1 can of chopped tomatoes.
1/2 Swede or Turnip
Sweeteners (I'll Explain)
Quorn - Optional
Meat - Optional

1. I start by heating some oil in the large pan, I use fry light oil! 1cal per spray! I then add the chopped onions which I slice nice and chunky! Let it sizzle until the onions are soft and juicy!

2. I then add boiling water until it comes to around half way of the sauce pan, I then add the diced Swede/ Turnip, broccoli and cauliflower. I also add two heaped teaspoons of Tikka Masala powder and one teaspoon of medium curry powder and then stir.

3. I add sweeteners because I like a sweet curry, sweet and sour! :P! It's also a low sweet/ calorie version of pouring sugar in. I add 4 of these bad boys in.

4. After 10 minutes add the other ingredients and let it simmer. Go watch a film, curl your hair or even wash your car!

5. Once all the vegetables are nice and soft with a bit of crunch, add salt to taste AND EAT IT!
