
I'm feeling very very summery since it's very sunny out side, and I'm stuck inside because I have no car -.-... Anyweeeeyz, my lovely friend Amy and I were in London around two weeks ago and we had some champagne cocktails in a London bar, and I must say it was very fabulous! It was the first time I've ever tried a champagne cocktail (I've tried Champagne) and I much prefer it over plain Champagne. My friend had a strawberry jam cocktail, where I had a Peach Bellini, which in my opinion is really summery!
Ingredients - Serves 6
200ml tinned peaches in fruit juice
750ml Champagne
Method
1. Add all of the peaches and the juice into a food processor and sprits it for a few seconds until the mixture is nice and smooth.
2. Divide the Purée between your 6 flutes (you want a good couple of centimetres per glass)
3. Then top up with Champagne, make sure you don't over fill as you don't want to waste any of the precious liquid!
